SKINNY IS THE WINNER!

Congratulations to Leon "Skinny" Mueller! He was the winner of our Farmers Market drawing for a wagyu beef Osso Buco roast! We appreciate everyone who came out to the Winchester Farmers Market. There was a lot going on this past Labor Day weekend with the fair and the parade, so we want to thank everyone who came to support us at the market.



Osso Buco is a leg shank marrow bone. You can cook it like a roast. I find the best method is to season with salt and pepper, dredge in flour, and then fry the outside like chicken fried steak in a dutch oven using a little wagyu tallow. Butter or oil would also be fine. Once the outside is nice and crispy, remove it from the pan add enough flour to your oil and brown it to make a gravy. Add in onions and carrots, and enough water to cover the veggies. Nestle the shanks back into the dutch oven, cover and place in a 350 degree oven for 2-3 hours. Serve over a bed of mashed potatoes. Finish with parsley.



I'd like to thank Erika O'Neal with Bastrop Guide for visiting us at the farm. We met Erika at our August Farmers Market. She created a nice video of the Farmers Market and tagged us in it on social media. Erika and her husband Robert, and their family came out to the farm to buy meat for their family. She and her daughter Paris created the video. They did a great job. We really appreciate them and their talents.

Weise Farms Wagyu Beef Filet Mignon.jpg

OMG! That filet was amazing. Coarse salt and pepper crusted, wrapped in bacon, seared in a smoking hot cast iron skillet, flipped and  finished in a 500 degree oven. Killer!

We had a couple of friends over Saturday and I served them Weise Farms wagyu smoked beef ribs. They melted in your mouth!! The flavor was rich and creamy.
